  1. Heat oil in a heavy based frying pan on medium heat. Add the onion, garlic, ginger, spices and capsicum, cook for about 2-3 min Stirring constantly
  2. Add 1/2 cup of water and chicken to the pan and cook till chicken is heated all the way through - maybe 2min
  3. Add the cooked rice, raisins, almonds and chopped coriander Stir over a medium heat until combined (2-3min)
