Molten Chocolate Lava Cake

For anyone who has been on a cruise, you know the desserts onboard are to DIE for… We were on an 11-day cruise to the South Pacific recently on a Carnival ship. And I fell in love with their melting chocolate cake. I attended the Chef’s Table (Highly recommend) where the head chef SHARED their recipe.

Chocolate Melting Cake is a highly popular cake served in the dining room on Carnival Cruise Line - It's a beautifully rich dessert, perfect after dinner or a midnight indulgence.
You may want to serve it with Vanilla ice cream.

Equipment

  • double boiler
  • measuring cups
  • Whisk
  • Spatula
  • Scale
  • butter knife
  • baking tray optional if baking more than 2

Ingredients

  • 42.5 grams Dark Chocolate Lindt 70%
  • 42.5 grams Milk Chocolate Optional - can use all dark
  • 85 grams Butter Room temp
  • 2 Eggs Room temperature
  • 21.25 grams Caster Sugar
  • 28 grams Flour

Instructions

  • Pre-heat oven to 200°C
  • Grease your molds/ramekins/baking dishes
  • Keeping ingredients separate, weigh out your flour and sugar, butter and chocolate - set these aside till ready to use
  • Break the chocolate into their blocks, and cut the butter into chunks
  • Melt the chocolate and butter using a double boiler
  • Mix eggs and sugar, hand or electric whisk till sugars are dissolved - by hand its a couple of minutes
  • Once this is a pale color add your flour, and mix well.
  • Add the egg mix to the melted chocolate. Mix.
  • Pour the batter in the greased molds
  • Reduce oven to 180°C
    Bake directly in the oven at 180°C for no more than 14 minutes
  • Carefully remove from oven, and place on a serving plate - it is your choice if you want to turn out your cakes or eat them out of the bowls

Optional

  • Sprinkle with icing sugar and serve with Ice cream
