Ingredients

  • 2 tbsp Vegetable oil
  • 1/2 Red onion finely chopped
  • 3 cm Ginger finely chopped
  • 1 clove garlic crushed
  • 1 tsp Ground turmeric
  • 1 tsp Ground coriander
  • 1 tsp Ground cumin
  • 1 Red capsicum diced
  • 1 Green capsicum diced
  • 300 g Chicken Pieces cooked as tikka or salted
  • 2 cups Basmati Rice cooked as per pack instructions
  • 1/2 cup Raisins
  • 1/2 cup Almonds slivered
  • 1 bunch Coriander washed & roughly chopped

Instructions

  • Heat oil in a heavy based frying pan on medium heat. Add the onion, garlic, ginger, spices and capsicum, cook for about 2-3 min Stirring constantly
  • Add 1/2 cup of water and chicken to the pan and cook till chicken is heated all the way through - maybe 2min
  • Add the cooked rice, raisins, almonds and chopped coriander Stir over a medium heat until combined (2-3min)
